Every grade comes straight from each city's official health-inspection data — NYC's DOHMH letter grades, LA County's window placards, Chicago's pass/fail results, Southern Nevada's Vegas grades, King County's placard ratings, Austin's inspection scores, Boston's inspection results. Cities grade differently, so clean, mid, and cooked map each city's own system onto one honest scale. Grades reflect the most recent published inspections and can change over time.
