Description

Lieviteria è allo stesso tempo un birrificio (impianto da 5 hL e cantina da 70 hL in ampliamento), un laboratorio di selezione e propagazione lieviti (in fase di sviluppo) e un Brewpub per la mescita delle birre autoprodotte. L’obiettivo è di creare ricette semplici ma dotate di un carattere preciso, capaci di colpire il bevitore pur nella loro essenzialità. A quattro anni dalla nascita le birre in gamma sono 16 per un totale di circa 450 hL/anno (impianto in espansione per una produzione potenziale di 800hL/anno). Alcuni degli stili birrari proposti da noi ricalcano stili di birra cosiddetti “dimenticati”, frutto di approfondimenti riguardantid le tradizioni birrarie più antiche dove le materie prime fermentescibili utilizzate differiscono spesso dal classico malto d’orzo, come frumento, segale, avena, ecc. Da cui l’interesse nell’esplorazione della biodiversità autoctona al fine di trovare fermenti in grado di caratterizzare il prodotto finito così come veniva caratterizzato da lieviti non commerciali ma tramandati da birraio a birraio.
Il birrificio nasce a Castellana Grotte (BA) ed è gestito dai soci Angelo Lovece (Chimico Farmaceutico) e Rinaldi Pasquale (promotore finanziario), mentre il birraio è Angelo Ruggiero, noto per il blog di BEREBIRRA e finalista BIRRAIO DELL'ANNO EMERGENTE 2020.
Nel 2021 siamo stati inclusi nei 50 birrifici del premio BIRRAIO DELL'ANNO (non tra i primi 20) e la nostra Altbier (Schumi) è stata inclusa nelle migliori birre del 2021 dal sito CRONACHE DI BIRRA. Siamo inoltre presenti sulle guide: Le Birre d'Italia de L'Espresso, Atlante dei birrifici italiani, Guida delle birre d'Italia di Slow Food.
