Erstmalig im Jahr 750 als Vogtei „Ebilizdorf“ in fränkischem Reichsbesitz urkundlich erwähnt und im 11. Jahrhundert von Kaisern und Königen besucht, deutet vieles auf eine zentrale Bedeutung des Ortes hin. Gelegen an dem bedeutenden Handelsweg „Lange Einführung Dorfrundweg Hessen“, gab es in Ebsdorf einen königlichen Wirtschaftshof. Bis in das 13. Jahrhundert in mainzischem Gebiet gelegen, ging das Vogteigericht Ebsdorf 1335 in den Besitz des Landes Hessen über. Nach dem Dreißigjährigen Krieg entwickelte sich Ebsdorf dann zu einem Marktort. Rund um den Kirchhof entstand der jetzige Ortskern mit eindrucksvollen fränkischen Bauernhöfen und kleinbäuerlichen Einhaushöfen. Die reichhaltig verzierten und heute liebevoll restaurierten Fachwerkhäuser blieben auch im zweiten Weltkrieg unbeschadet
