Una guía que ofrece, además, la evolución histórica de la dieta mediterránea desde la perspectiva del Mediterráneo como encrucijada bajo la influencia del comercio con otros territorios y la importancia de la diferenciación y singularidad de dos productos tan nuestros como son el aceite de oliva y el vino, así como otros artículos de interés gastronómico.

Y todo ello, bajo la perspectiva de aspirar a constituirse en una herramienta de información novedosa para contribuir a la lucha contra el cambio climático global.
